KEK KEJU LEMON


250 gm cream cheese - room temp
150 gm butter - room temp
250 gm plain flour
1 tsp baking powder
220 gm castor sugar
2 tbsp lemon juice
1 tbsp lemon zest - optional
4 grade A eggs
Method:
1. Whisk plain flour n baking powder together
2. In a mixer bowl, beat cream cheese, butter n castor sugar until creamy. Add eggs one by one , beat well  until incoporated.
3. Add lemon juice n lemon zest.
4. Fold in flor n mix well combined n pour into greased n line cake tin.
5. Bake at 160 C for 45-50 minutes.
